Me too! I have lost a ton of weight over the last year using Phase 2, but have noticed a 2 lb increase over the last month or so. I have been way too liberal in my treats--white rice and white flour.
Just finished 2 eggs with spinach for breakfast (I'm going to die without my juice) and am packing some celery sticks with natural peanut butter for swim lessons snack. Lunch will be the roast beef rollups (though I kind of deconstruct it in a salad). DH went fishing this wknd so tonight we'll have grilled sea bass and then broiled asparagus with parmesan sounds good.
I LOVE Paul Newman's light balsamic! It does have a little sugar in it though--2 g in 2 Tbsp. I guess I should skip it for phase 1 and make my own.

Well, egg for breakfast and I made up some sugar free jello - yuk - not my favorite. Salad for lunch -- or asparagus soup. Supper to yet be decided. It will have to be quick, we bowl today. Maybe chicken breasts and fresh green beans.

Lunch was grilled tilapia and green beans with garlic, while hubby had the fried cod and potato salad with dill. Dinner will be grilled t-bone steaks, and have to come up with some sides. Why are side dishes the hard part? I made rice pilaf for the boys last night, but should make 2 low carb sides for tonight.

I couldn't get excited about roast beef for lunch so instead I put together a chicken fajita salad. So so good--except that the avocado that inspired it turned out to be yuck. But leftover chicken fajita meat, lettuces, black beans, red onions, a diced tomato from the garden topped with some shredded colby jack made a great salad. I had intended to make an avocado/cilantro type green sauce dressing but since the avocado was a no-go i just used a Tbsp of ranch dressing and thinned it with a little skim milk.

Salad with cottage cheese for lunch. Post bowling supper had to be quick so a spinach frittata did the trick. DH likes that and another egg isn't going to hurt me today. Next time I'll try some yogurt in the jello mix -- not a bad idea.

Somehow mixing yogurt in the jello makes it go down better. I mix in drained yogurt with the hot water and jello mix...it looks curdled at first but when you keep whisking it smooths out and gels up great and creamy. okay, maybe not creamy. but a decent breakfast if you're in a hurry and don't have time for eggs.

Sugar free jello served in a wine glass. Tres south beach. Kidding aside, I do portion it in wine glasses and keep it for our television snack.

Funny, but I find that things served in fancy glass or on fancy china actually do taste better. At least they seem to. Maybe keeps one from feeling deprived if one is trying to lose weight?

okay one day down, thirteen to go! ugh.
Dinner last night ended up a little hairy...we had some last-minute company for dinner so there was literally 2 bites of fish left for me. My three year old ate three fillets! So I ended up with more leftover chicken fajita meat, some steamed green beans, and a fudgsicle. Here's to a new day!

DD will be here tonight so it will be fish for us too. Gotta get that trout from the freezer eaten up. Fresh green beans and salad should be enough with it.

How was day two, guys?
I had 2 eggs for breakfast (no time for veggies), string cheese for snack, and a big bowl of Mexican chicken soup for lunch. It would have been perfect if it wasn't 95 degrees today! Dinner was a large salad with balsamic and olive oil with beef filet mignon (I cut off the bacon). I need to be more intentional about getting my 5 cups of veggies--I barely had 2 1/2 today.
I did have a large bite (only one!) of brownie this afternoon around 3 pm when I felt a touch of South Beach flu (headache, nausea, fatigue) coming on, and it worked like a charm. I'm going to try and get more carbs in tomorrow with yogurt at breakfast and beans at both lunch and dinner.
I know daily weigh-ins don't matter but it was motivating to see those pesky two pounds gone off the scale this morning!

Supper -- one medium baked trout with salad, cottage cheese and greenbeans
I cheated and had some chocolate. Tomorrow is another day.

Happy day 3! I am down another pound (of water weight I'm sure). I was even feeling energetic enough to exercise last night.
Breakfast: 2 eggs in a Denver omelet
Snack: yogurt/jello
Lunch: roast beef roll up with celery sticks
Snack: sf fudgsicle

i'm subbing boneless chicken breasts and adjusting the cooking method accordingly. I'll just eat around the bacon...hopefully it won't too impart too much fat to the dish. Mashed potatoes for the fam and I guess I'll make a salad for me.

I also discovered another trick on the sugar free jello. I don't mind the taste at all until about 90 seconds after I finish my cup when the aspartame taste shows up loud and proud in my mouth. I added a couple of tablespoons of fresh lemon juice to the mixture this time (I like lemon-raspberry jello best but they were out so I used raspberry) and now the aftertaste is lemony...much better!

That sounds like a definite improvement on the Jello!
I had a spinach omelet for "brunch" (got up at 10am), and a wedge of Laughing Cow cheese. Delivered a pound cake to son's anime club meeting, and found a TDF LBD at the resale shop. It zips, but is snug. So now I have a goal to see how I'm really doing. Told hubby all this in the car. And he drove straight to Graeter's Ice Cream for a hot fudge sundae. I was bad with a scoop of raspberry sorbet, instead of my usual parfait (2 scoops raspberry-chocolate chip ice cream, 2 syrups, and whipped cream). Dinner however is grilled chicken breasts, creamed spinach (R. Gold's Lo-Carb 1-2-3), and green beans. I'll also make rice pilaf for the boys. I have French country bread and buttermilk-rye breads raising on the dinner table for practice for class. I'll have to give them to the neighbors to get rid of them. (the bread, not the neighbors)

Next headline: Green beans cure common cold!
They really are the standby veg, aren't they? The creamed spinach is super easy, though, and my son devours it.
2- 10 oz. pkgs frozen chopped spinach
1 1/4 cups low fat cottage cheese
1 Tbsp butter
Cook spinach, squeeze most of the water out. Toss in food processor with butter and cottage cheese. Puree. Reheat, correct seasoning, and serve hot. 4 servings.
Practically instant and 150 calories a serving. I used the microwave so it wouldn't scorch when reheating, and it was lovely.
Lunch is baked chicken breast, the rest of the above spinach, and the last of the green beans. Spent 30 minutes on the elliptical machine, and am setting up an appointment with the weight room for orientation.

Chicken breasts tonight in some form or another, probably Jacques version in mustard sauce and asparagus while it's prime. We're having cool weather so it will probably be a long season for it this year. I like my spinach raw, in a salad. DH just loves it cooked plain, but I'll give your creamy version a try. Thanks.

The creamed spinach sounds great! I wonder if I poured some eggs over it we could have a yummy crust-less quiche?
Today was so boring food wise.
Yogurt jello for breakfast.
roasted chicken breast topped with marinara and mozzarella for lunch. Fudgsicle for snack.
Dinner was a *Yawn* chicken salad: romaine, poached chicken, celery, pecans, and mayonnaise. I had no idea how much I would miss the apples and grapes in my go-to recipe!
Another yogurt jello for dessert.
Only had .1 lb weight loss today--was to be expected b/c the first few days were pretty dramatic.

I made a nice chicken stir fry with carrots, green pepper, onions and cabbage that was great, but blew it when I let DH buy me a small DQ. Comfort food, I even ate the dam cone. sigh. Today we meet some friends for lunch. I hope I can limit myself to an omelet while they chow down a nice panini. Wish me luck.

I just came home from baking lab with chocolate merengues sandwiched with chocolate ganache, and an iced yellow cake, all of which I need to get rid of FAST. I did have one of the cookies, and a diet coke for breakfast. Lunch will be the usual chicken and something. Last night was baked chicken and creamed spinach. I have corn on the cob, the freaky rambutan, and sugar snap peas to saute with yellow peppers (Gold's LC 123). I made cantaloupe wrapped with proscuitto for the boys last night, while DS was studying, and had 2 pieces of that. Any better ideas about dinner that I can steal?

I skipped the panini and ordered the spanish omelet. Broke down and did have some whole wheat homemade toast. ......... I know....... but I took half the omelet home and will finish it for supper. This weekend will be tough.

Yes, we are grilling out with my parents (80 and 76) on Sunday, and there are always hamburgers, Big Red Smokeys (smoked sausage), bowls of potato salad, pasta salad, chips, desserts, etc. I may roast zucchini and peppers to have a side dish I can actually eat. My dad has type 2 diabetes, and shouldn't have most of it either, but convincing him of that at 80 is hard. ("hasn't killed me yet")
And I have a 6 hour baking lab tomorrow morning/afternoon, with more goodies to bring home.
Dinner tonight is baked chicken breast, roasted slices of sweet potato, corn on the cob, and sauteed sugar snap peas. And chocolate macarons. They aren't pretty, but that is my piping technique at fault. They taste great. Everyone I have given them to moans at the first bite.

I've tried making them--need muchmore practice piping. It looks like it should be so easy! The Sunday menu sounds tempting. Good luck. I'll be doing a 'picnic' ham and we'll be munching on that pretty much the whold weekend. (in one form or another)

Today was a disaster. I left the house in a rush without breakfast and it just went downhill from there.
Snack: 1 cup yogurt with jello, several bites of coffeecake
Lunch: a bite of banana, a few grapes...skipped lunch when I discovered the freezer had been open all night and I had a lot of food to cook or give away.
Afternoon implosion: 1 fudgsicle, 3 huge tablespoonfuls of frozen cookie dough
Dinner: broiled fish with lemon pepper, huge serving of MadMom's squash casserole.
Good luck this weekend! We are headed out of town to visit friends so I might not be good. I refuse to be one of those high maintenance guests so I'm just going to eat in moderation and skip dessert if I can do so without drawing attention to myself.

Sorry my squash casserole played a role in your bad day (isn't it delicious, though?!) but don't worry about it. You will climb back on that horse. Just don't make the mistake of saying "well, I've blown it, so might as well pig out." The other night, DH tempted me with some ice cream. I was going to be good and just eat a small amount. Ended up eating a big hot fudge sundae. Yeah, I could tell it when I weighed the next morning, but just have to consider it a minor slip (you know, it really wasn't worth it, and I'll be better able to resist it next time) and move on. We're here for you, and I'm proud of you for posting your successes and failures.
