The Weekend Baker (post #62638)

I know we've discussed this book before, but I'm really enjoying it.

Just made the double decker brownie chocolate chip bars last night. The 10 minute mocha pots du creme are fabulously simple, and I have made at least 4 batches of the emergency blender cupcakes. Since my blender is old and tired, I find it's easier to just make them in a bowl - almost as fast. Especially with my assistant's help.

DH says they are the best cupcakes, and Buddy agrees.

I keep coming back to the pics of your adorable kids.

Have  you made Annie's mocha-cinnamon chocolate chip cookies from that book? Pg 282.  I tried them tonight and found they spread all over the place. I'm wondering if the amount of butter in the recipe is correct...it calls for 20 Tbs. (10 oz) to only 2 cups of AP flour.

I'm also not too crazy about the 3 T of espresso powder--too much coffee aftertaste for me.  I'll see what DH has to say about them.

I baked the first 2 batches on parchment as always, (which wasn't called for in the recipe) The last batch i just put on an ungreased cookie sheet. They're almost ready to come out of the oven. Well that didn't make much difference. I couldn't find a picture of them in the book. They are not the ones on the cover.

no, he's not.
he can now climb up on the couch - and then walk off - much to his head's surprise when it hits the floor.

That's the most amazing age...when they turn from babies into toddlers, then before you know it, he will be a little boy, then a young man...sigh.  Time flies when you watch the wee ones grow up.  Liam reminds me of Buddy - I think they will both be big men when they hit adulthood.

So do me a favor, please.  He may not be a baby but that tummy looks perfect for blowing a huge blast of raspberries.  Ms. Ipke is perhaps too sophisticated for such rollicking fun but if the spirit moves you...go for it.  I'll be listening for the giggles.

Was this recipe in FC a year or so ago? I think I put my dough in the fridge for 20 minutes or so, to chill the butter and make them less spreadable. However, they are supposed to be thin and almost lacy. And very, very rich. I found it hard to get rid of them at a coffee we had.

Ok, thanks.  These  fit your desciption. Time will tell if I can get rid of them here. LOL

Sorry if this has already been addressed, but, 20 Tbsp. of butter is not 10 oz.

Jean's picture

Umm, I just checked a quarter#butter and according to my calculations 20 T = 2 1/2 sticks = 10oz. The cookies were better the 2nd day, but our humid weather softened them a LOT.

DH suggested I go back to the "last" recipe. Somehow these aren't disappearing.  Ah, well, better for his not so svelte figure.

Of course, you're right.  What was I thinking!

Which brings up a peeve of mine:  since there are 16T to a cup, why not just call for
1-1/4 c butter instead of 20T?  Does anyone actually get out a Tbsp measure and scoop out 20 T?  I've also seen recipes calling for 3 tsp--why don't they just say 1 Tbsp?  Am I missing something?

Good question. Trying to save the math challenged some figuring?  Sure seemed more complicated to me this way.  Oh, well.

Most American sticks of butter are marked off in Tablespoons, so I suppose our cookbook authors think that makes sense.  Of course, if you're using big pounds of butter, it's a lot more difficult.

Big pounds?  Those must be those Texas pounds o' butter.  We just get the regular ol' 16 oz, 454 gram pounds round here . . .

:)

I think the "big pounds" she is referring to is a one pound block of butter--not in sticks, etc.

It's in the Michael Jackson thread.  Molly Ivins said that America is such a great country, because where else could a poor black boy grow up to be a rich white woman.

These pictures are for sure CONTEST-WORTHY!

If I were the author of the book, I would include them in my website for advertisement - and even pay you for it... :-)

Now, if I may file a complain? Is it complain or complaint?
Not sure...

WOULD IT BE POSSIBLE IF YOU ALL STOPPED TALKING ABOUT COOKBOOKS FOR A LITTLE WHILE? You know, this is ridiculous, but I just ordered this freaking book after you posted and everybody else raved about it.

I am in desperate need of help.

Ok, now let's stick with cooking discussions, ok?
