Very informative. I check these frequently when new veggies or seafood or sauces or whatever I am unfamiliar with are mentioned at CT.

I have the sauces and veggy books. Am still undecided about them, so I have not purchased any others.

I have the Vegetable and Fish Books. I use them more as reference books, than for actual recipes. Both books have a lot of soup and sauce recipes in them, so unless you think you need a 500-page book of sauces of soups, these will give you the "Cliff notes" of his recipes.

I also bought Essentials of Cooking. Beautifully photographed basic cookbook, but I never look at it.

I have Splendid Soups, Vegetables and Sauces.  Sauces is such a tome!  I don't use it much, though.  It's fussier.  I adore Soups and Vegetables, though.  I use them both all the time.  Just tried the Cauliflour with Indian spices the other night.  It was terrific.


When we had a bumper crop of beets this past year, the beet soup recipe got a lot of mileage.

Hello, Althea. If you look at the posts previous to yours you will note that they are from 2001- so you may or may not get a response from those posters. At least you are hearing from me though. I have Vegetables and like it. Good photos of techniques, like a cooking class, and good simple but sophisticated recipes. The creamed spinach is a favorite with DH and myself. I keep an organic kitchen garden and am also a very small vendor at the local farmers market so this cookbook is an inspiration to me.

I have them all, including Salmon!  I too use them as a reference, but have made a couple of recipes from the Fish & Seafood one.
