"CIA" Cookbooks--Any good ones?

I've been looking at a few of the Culinary Institute's cookbooks--they seem to be everywhere I go.  Would be interested in any feedback.  There seems to be a new one out--geared to 'home-style' cooking I believe.

PROFESSIONAL CHEF is an excellent book.  NOT for the homeowner.  Don't waste your money if you're not cooking for many.

What's your definition of "many"?--family of six and like to entertain...

Recipies are scaled for production, ie; 20+ portions.  That is not to say they cannot be scaled back.  Pro Chef is an excellent reference.
