Beginner Vegetarian

DS#2 called today to tell me that he is becoming a vegetarian and would like some help with cookbooks. He has cooked for himself for years but does very simple things, he probably doesn't need a lengthy philosophical discussion of the blessings of vegetarianism either, just good-tasting dishes he can make after work. Any great recommendations?

I've just started looking on Amazon and thought these looked promising, does anyone have either of them?

What about the Moosewood cookbooks?  I think they are supposed to be good.  I bought several vegetarian cookbooks at one time, but cannot remember what they were.

The classic is Vegetarian Cooking for Everyone by Deborah Madison, which goes light on the philosophizing and heavy on the cooking how-to. I've heard great things about Bittman's How to Cook Everything Vegetarian, also.

I just got this book, bought it used and think it is a masterpiece of info.

very glad I bought it. I am not thinking about becoming a vegetarian, like my t-bone steak too much, but definitely have been eating less meat and more veggies. This book is great, I am sure I'll cook a lot from it.

Peter Berley's The Flexitarian Table - a bridge book between veggies and carnes and any of his other books.

of course, The Moosewood traditions

The Vegetarian Epicure by Anna Thomas and her various books.

There are a lot of cookbooks out there, as you know, and individual cultures do a lot of veggie meals. Indian, Mediterranean, Tibetan, Nepalese, etc.

Then there are the vegans....

here's another vote for Deborah Madison's books. And I love The Sublime Vegetarian by Bill Jones, though it seems to be off the radar for everybody else. Amazon has it, and it's cheap, so you really can't lose. I think Madhur Jaffrey has a vegetarian cookbook as well, but her recipes really aren't for the neophyte, I find. They're wonderful, but tend towards the complex, and call for ingredients that might be a challenge to find.

Thanks all. I've got The Savory Way and The Greens Cookbook and I'm not sure DS would make many of those recipes, they are a little fussy for him. I'll check out Vegetarian Cooking for Everyone. I can't find my Moosewood but I have Katzen's Vegetable Dishes I can't live Without and Vegetable Heaven. Maybe I should just lend him all my vegetarian cookbooks and see which ones he likes.

He has been leaning towards healthy eating for over a year and seems ready to learn how to eat without meat. He's pretty much given up on eating out so he'll have to broaden his repertoire if he isn't going to be totally bored.

He lives in Sacramento so he shouldn't have any trouble finding ingredients.

Thanks for the suggestions--I'm going to look all of them up now.

Marian Morash's The Victory Garden Cookbook--from the old PBS show of the same name.  The recipes aren't strictly vegetarian--a number of them call for animal products.  But the book is such a handy resource. It includes hundreds of recipes and preparation tips and is organized very sensibly with chapters on each vegetable.  I always turn to it first when I've got veggies on hand and am not sure how I want to fix them.

I was thinking more about veg cookbooks after lunch yesterday (which was just lovely, thanks for putting it together!).

I have Fresh Food Fast. I haven't cooked a lot out of it but when I have it's been good. It's not a huge tome and it's laid out pretty simply. Might be good for someone who's not an expert in the kitchen?

Someone Grigson.. I think it is Sophie - has a really nice book on vegetables. Lots of good ideas for different ways to treat them. I believe it is just simply called Vegetables. Her mother Jane also has some books, but I haven't see those.

Looks nice but I can't find that one on Amazon.com. Some of Jane's books and a different one of Sophie's are available from private sellers. I'll keep looking for this one.

It might even have a different name. Apparently American audiences are so vastly different, they occasionally require a totally different name as a marketing tool.


I found her recipes simple and approachable and focused on vegetables, not that faux meat so often rampant in vegetarian dishes.

I think it may be. None of the recipe titles strike a chord, but I seem to remember the chapters being things like shoots and stems.


What I particularly liked was the shopping aspect - she tells you exactly what to look for and since it is a UK book the seasonalities should be similar. Correct hemisphere at least!

Deborah Madison books are great and the vegetarian times mag has an email thing where I get recipes, I read them and save if I want it and delete if I don't.  Lot's of blogs around as you are finding out.  If he likes Morning Star Farms makes a "recipe starter" that's soy based crumbles.  I use it to replace ground beef in chili's, lasagnas, moussaka etc.  I have a client who went pescatarian and this helped with the kids' desire for meat!  Great texturally. And it's easy to use, just add at the end of cooking.  I'm sure he knows about the need to monitor his protien intake to make sure he's replacing it for the lack of meat.

I picked up a Dragon Lady vegetarian cookbook based on somebody's recommendation here. Darn, darn, darn. It wasn't Dragon Lady but she was female and her last name did have Dragon in it.


Ahhh said, Doooctaaaa, ain't there nothin' I can take? Ah said, Dooctaaaaah, to relieve this belly ache.

Do not meddle in the affairs of dragons, for you are crunchy and taste good with parsley sauce, goat cheese garlic mashed potatoes, Galena Cellars Niagra grape wine & Pie Boss's apple crumble topped with Ruth & Phil's sour cream/cinnamon ice cream.

Yep, she's got some good ones, but they might be a little overwhelming for a new convert - they tend to use lots of ingredients.

The New Laurel's Kitchen cookbook is also a good one. It's old school - no fake substitute stuff - and does have some philosophy and such. But, the recipes are straightforward and tasty. Here's one that I like from there:

I'd second the recommendation for ethnic food, too. We eat mostly ethnic food. (Oh, and for a while I was posting recipes in a Mostly Meatless project on here. Might be some things in there for him to try.)

As Jean said, the name is Crescent Dragonwagon and the name of the book is Passionate Vegetarian. It's an excellent book in spite of the author's unfortunate name, which is not her birth name. She's the daughter of Charlotte Zolotow who wrote many books for children.

I just realized I didn't post which cookbooks I finally sent my son. I've saving Madison for a while, he would find that overwhelming right now. Maybe I'll give it to him for Christmas.
