I've been baking my way through Baked (checked out from the library). It's a great cookbook, everything I've made is stellar (at least according to my co-workers, who get most of the baked goods coming out of my kitchen).

The recipes aren't super simple - there's definitely something to be said for things that can be thrown together quickly, and so far I haven't found that anything can me made on a weeknight after work (unless I want to stay up really late).

A sampling of what I've made so far:
- Lemon lemon loaf
- Root beer cake - didn't taste like root beer if you ask me, but still a good chocolate cake
- Sweet & Salty cake - I'm a sucker for caramel, salt, chocolate
- Peanut butter crispy bars - like rice krispies topped with a milk chocolate peanut butter layer and a dark chocolate layer. Not my thing but co-workers went wild.
- Coconut snowball cupcakes - was told these were the best cupcakes I had ever made.
- Millionaire's Shortbread - shortbread with a layer of caramel and then a layer of dark chocolate

I was just looking at the book yesterday.... Our Thanksgiving is this weekend, and I was thinking of making one of the pumpkin desserts and the Classic Apple Pie. For the kids lunches, I've mad the Monster cookies, they are really good and fairly healthy too. In the summer, I made the Raspberry Crumb Breakfast bars (subbed with my homegrown loganberries) prior to a camping trip and they were a huge hit. Awhile back I made the Lemon Lemon Loaf, I'm sure it was good too. I'm going to have to try some of you suggestions. I've bookmarked to try the Sweet and Salty Cake. Cheers

Oh, thanks for giving me some ideas for what to make next!

I was thinking about the pumpkin whoopee pies. I'm not a pumpkin fan but I rarely eat the stuff I bake anyway. However the raspberry crumb bars look they'd be right up my alley.

The Sweet & Salty cake was work. And mine was... challenged. I had to do some work to shore it up (delicate layers, and the caramel made things slip around a bit). But time in the fridge helped firm things up and it turned out really good.
