Lamb Merquez Patties
Credit for this recipe is Risottogirl
For a pound of ground lamb I use:
1 teaspoon each ground toasted fennel seed (sometimes I use fennel pollen), ground cumin, ground coriander and 1/4 teaspoon cinnamon. We like it spicy so I use 3 teaspoons harissa (from a tube, I buy it in France) and 4 cloves of garlic, finely minced and about a teaspoon of kosher salt. I mix it gently and form 4 patties (or more meatballs).

It really depends on the patty size etc., but overdone lamb is yucky, IMO

I got them well done and was surprised how juicy they were. Could be a fluke with me and the grill though.

enough fat. If the lamb is lean it gets dry.

I divide 1 lb into 4 patties and cook them in my cast iron pan which I get real hot. 4 min. per side do it. My lamb has lot's of fat so no prob with dryness.
