Butter Cookies by Alice Medrich

This was posted last year I think - sounds like CLS talking at the end there. :) They are excellent.

Butter Cookies by Alice Medrich
makes about 4 dozen 2-inch cookies

16 tbl. unsalted butter, softenend
3/4 c. granulated sugar
1/4 tsp. salt
1 1/2 tsp. pure vanilla extract
1 large egg yolk
2 c. all-purpose flour

In the mixer or in a SS bowl with a wooden spoon, beat the butter with the sugar, salt and vanilla until smooth and creamy, but not fluffy, about 1 minute with the mixer. Mix in the egg yolk, scraping down the sides of the bowl. Add the flour and mix until just incorporarted. Scrape the dough into a mass and knead it with your hands a few times just until smooth.

Form the dough into a log about 2 inches in circumference, srape and refrigerate the dough at least 2 hours, preferably overnight. May be frozen up to 3 months.

Preheat the oven to 325 degrees F. Use a sharp knife and slice the dough 1/4" thick. Place the cookies at least 1 1/2 inches apart on ungreased cookie sheets.

Bake 16 - 18 minutes or until light golden on the edges, rotating the cookie sheets half-way through the baking time.

Let the cookies sit on the pan for about a minute before transferring to a wire rack to cool.

Cam, pay close attention to her directions. I followed them EXACTLY because her technique is so different, such as: the degree of creaming the butter and sugar, the kneading, etc. I wanted to make sure I did exactly what she did so I could tell if the results were any different. To me, there were. I found these cookies had a wonderful texture and flavor.

Yes, that's me. Did a test weekend with 6 different butter cookie recipes. This was by far and away the best. The perfect butter cookie.

CORRECTION!!!!!!!!!!


This recipe has a typo - it should be "1 large egg YOLK" - not one large egg.

My niece makes this recipe, except that she rolls the dough out to about 3/8 inch and cuts them into shapes (hearts, usually), then dips them in melted chocolate.  Her friends have dubbed them "OMG" cookies!

My leg/knee gave out and I splattered myself all over the kitchen floor=goose egg on head and technicolor foot.  I walked on it too much yesterday so I'm back to elevation alternating with cold soaks today after a rather sleepless night. That'll teach me.

Thanks, it will be better. I'm Doing more soaking today and will have Rod wrap it tonight . I actually managed to get down the 5 steps to the back porch and hobble out for a golfcart ride around the  yard today.  The perennials change from week to week and I hate to miss anything.

Sweetheart, did you ever get an xRay?  I know, you're a retired nurse, but seems like if you suspect a broken bone, you should get to the ER.  Of course, I don't know which one it was, and if it was a toe, nothing they could do for it, which you probably already know.  Hurts like hell, though!

No x-ray. I'm sure its a soft tissue injury.  It will just take a while to heal. In the meantime I'm getting bored and Ros's getting hungry. LOL He made bacon and scrambled eggs for supper tonight while I talked him through it. Pretty funny to see a guy multitasking when he's not used to it. Hee.

Wrapping is important, in my experience. I sent you an e-mail about balance exercises from the NYTimes. Obviously you can't do them now, but when you heal, perhaps they will be helpful.

They make ankle braces, too. Drugstores have them, and they work well if you have a good fit. You probably already know about them, but just in case you don't....

It was sort of nice to have DH cooking for me while I was pretty much incapacitated with the broken hand...but even nicer to get back to our normal roles where I cook and he cleans!
