a humble sifter

does anyone have a sifter that they love? I have had at least three, the most recent being an Oxo model that you kind of shake back and forth. It is well designed for someone with arthritis, I think, but very inefficient. I have also used a traditional "squeeze" handle model.

The squeeze handle ones are really bad for the wrist. Someone gave me one with a turn handle on the top and it sends a cloud of flour around the room. I think the sieve is the way to go.

 I started using a strainer. I've never found one that I like.

I also use a strainer.  If you can find one with a pointy rather than a round shape, so much the better.

I also use a wire mesh strainer, but I like the rounded shape. Advantages are that you can set it over a bowl so you can measure ingredients, then I use a wire whisk to quickly sift and then briefly whisk again to distribute the sifted ingredients in the bowl.
Spoon works too. To me this is so much more convenient than a sifter and there is one less piece of equipment cluttering the cubbord.

I started with the fifter that has the round wire that goes around and sifts - not reall that great then went to a strainer, and used that for years. Then last year, bought one of the squeeze handle sifters and when DW tried washing it ( I did not get to it before her) the remaining flour clumped up and I could not get it out - tried using the sifter while pouring boiling water thru it  and everything else I could think of - no luck - had to throw it out. It did no better than the fine strainer I had used anyway, so am back to the strainer and not missing the sifter at all.


1 - measure the board twice, 2 - cut it once, 3 - measure the space where it is supposed to go        4 - get a new board and go back to step 1

I once had a sifter, but gave it away and went back to, you guessed it, a strainer. Sometimes simple works best.

I will have you know, that a Bundt pan is not just a piece of equipment, it is a decoration and a conversation piece - just like jello molds!

Geesh, Adele, you shouldn't be so picky, LOL.  After all, there is a big difference between useless equipment and equipment which is never used.  Bundt pans are definitelly useful, even if I never use them.  Besides, they go in the space which might otherwise be occupied by sifters, LOL.

You're right, the Oxo "shaker" is pretty slow.  I keep cornstarch in mine to sort of bread things that I'm saute-ing.  Just shake it on while the food's in the pan.  True, I'm very lazy, and this saves a lot of cleanup and time.


For sifting flour, I always use a strainer.

I also have arthritis in my hands and have a battery operated flour sifter that is great. I just looked at it to see if it has a brand name but alas it just says "Flour Sifter" in red lettering and under that "Cordless/Battery". I got it from a catalog quite a while back and can't remember which. Perhaps if you Google "battery operated flour sifter" you'll get some info. The model number of mine is TS-201, made (where else?) in P.R.C. Hope this helps.

I also have an electric sifter but haven't used it in years because I found it kind of slow and usually needed a new battery, which I didn't have on hand.  I grew up with the squeeze kind and also have one of those but I find the strainer is faster and easier than either one of the others.  I always considered the battery operated sifter to be one of my more useless gadgets, but it's still around here somewhere.

thanks for all of the discussions! We didn't bake very much when I was growing up and didn't have a lot of gadgets. A strainer doubled as a sifter. seems like the basic design hasn't been improved on very much. Next question--peelers? Is there a place in the kitchen for having more than one type?

I like my Harp peeler, DW likes the staight peeler. I am considering a serrated peeler - supposed to be real good for tomatos and thin skinned fruit like plums.

I finally found a serrated peeler and love it.  Tomatoes, thin skin stuff and as Charlotte recommended- little stickers!

Yup, that's a good one, bought one last year in Madison, but I still find myself picking up the one my daughter bought for me from Pampered Chef. It's still super sharp after umpteen years of use.

Yes, This one. I'd be lost without it. And it's not expensive! I've had other peelers that look just like it, but the quality of the metal must be different. At first when she gave it to me I thought, ho hum, a peeler, but now I couldn't do without it.

  It looks like my regular peeler, so I know it probably feels good in the hands.  I don't know anyone who does pc, so I'd be out of luck, but it's good to know, just in case.

OOh, very nice. I LOVE asparagus and hate breaking the stems off--it seems to waste so much! I try to peel it with my trusty OXO but the blades keep slipping and getting clogged. Also, I appreciate the comments about taking off pesky stickers.

I'm with Jean, Karen, Gretchen, and Heather--a kitchen sieve has worked better for me than 3 (increasingly expensive) sifters. There are French drum sifters that look like the top of a drum--round, wide, and relatively shallow--that are really just sieves. I think you can get them with both coarser and finer types of mesh.
