Someone once asked a long time ago about the one I built for my DS. Ordered 8 sheet pan grates and built it so they just fit. Lower level is 3 200w bulbs on a dimmer. The shelf above has a metal liner above the bulbs and stops 2 inches from the back. Lower part of door has a small bath exhaust fan on dimmer. Fan blows air across the bulbs, up the back, thru the grates and exits thru the holes in the door. Works great for jerky, mushrooms and fruit. Dimmers allow you to control the temp and air flow.

He does 4 or 5 deer a year. The thing really needs 4 200w bulbs to run aroun 130 degrees. I couldn't find a dimmer that could handle more than 600w. It will run around 107 with the three. That works fine but takes 48 hours. He sits a ceramic heater, on low, a foot in front of the fan. Only takes 24 hours. Works fine though with out the heater, just longer.

couldn't you add a 4th light just dim three of them

your rig reminds me of the hot boxes that were built for making hot chow on construction sites..same principle. just not as deep and ours would be foil lined !

...... the temp at the top rack would easily get up to 300º +

just put your lunch in it at 7AM and by noon you had hot food.

I still have my SS bowls with lids I bought just for that purpose, but some guys would merely make a vent in a can of soup or whatever and cook it right in the can.
just never thought about it as a dehydrator
