I would like to make a couple of cedar planks for cooking salmon. Their are many varieties of cedar available. Are all the different species appropriate? Is one better than the others? Are there any dangers with any of them? TIA

Make a trip to your lumber yard and buy untreated
cedar fence boards (alder and cherry are also good but harder to find)- no treatment of any kind.
I buy 3/4" thick and cut them into l6" lengths for my use. One side of the fencing is planed and the other rough. The planed side is ready to use.
I don't spend too much time on them since they need to be replaced after several uses. They're are endless methods for use- in oven or outdoors- soaked and dry. Good luck.
