Wine to pair with onion soup?...

I've made the whole thing...., porcini mushrooms/juice, 5-onions;sweet,shallot,leek, garlic, and yellow,thyme grown from seed, my own beef stock, now............


 


What to pair with it? TIA,Philter.

To me it says Cotes du Rhone or a decent Shiraz.

Hi, Philter,
Nice to meet another West-Coaster. I'm from Ontario, but most of the people I talk with on the Forum are from points west.

I agree with the above suggestions. The Shiraz, though should be Australian. There should be lots of decent bottles in the $18-25 range. Perez Cruz from Chile also comes to mind, if you can find it. Should be about $16-17 in BC.
If you wanted to go a little off the beaten path, look for an Ontario Baco Noir. I know Ontario wines are hard to come by in the BC Liquor Board. We have the same problem in Ontario with BC wines. If you do find some, be warned - BACOS CAN BE UNEVEN. When you get a good one, and most are pretty good these days, they can be VERY nice. Let me know if you do find any.
