Seafood melange with tortillas (post #68881)
ColoradoAmy on Sun, 01/10/2010 - 10:14
I had a seafood (crab, scallop and shrimp) "dip" served with tortilla chips that came from Fine Cooking, but I can't find the recipe. It was cooked with white wine and finished with butter. Anyone know of it?

Without a recipe, I would make a volute with fish stock or clam juice instead of chicken stock, then add my chopped seafood to it in the order in which it needs to be cooked (longest required time first in, etc.). I would also add a little cayenne and a little nutmeg.
