I can't find this in the archives...I recall reading about the canned tomatoes (someone used the S&W brand from Costco) being roasted and then made into a sauce, but it's not coming up i a search for me. Anyone know of this?

I had a look, but couldn't see anything. There was that thread on the chicken legs with tomato and basil sauce though.

It wasn't S&W--it was the big #10 can of Italian tomatoes, and it is delicious. I'll have to look, but have you searched for oven roasted canned tomatoes? I think it was Glenys who originally posted it.

I just want to let you know that I've used the recipe from Lynne Rosetto Kasper for roasted canned tomatoes that Gretchen posted with S&W chopped canned tomatoes. It comes out quite well. I put the tomatoes in a roasting pan because I don't like having my sheet pans covered with caked-on tomatoes. Roasting them in a roasting pan can take longer than using half sheet pans but works fine. I confess that if the tomatoes are not as sweet-tasting as I'd like by the end of the cooking process, I add some sugar.

We went to the Farmers' Market Saturday and I got a bag of "past due" tomatoes (and of course they aren't summer tomatoes any more either). Sliced them with some onions and olive oil--and added just a little sugar-- and roasted them. Pureed and they are a lucious "Sauce" for some pasta.
I wouldn't do them on a sheet pan either!!

I do the oven roasted Romas on a "cookie sheet" style pan. These canned tomatoes are a little too juicy for me to use that. I don't do it down to a "leather" by any means, and hadn't really thought about it drying on a pan.
But I think even more what determines what I use is which oven. If I use my small toaster oven, it is usually a baking dish, not a sheet style pan.
