Does anyone happen to have Barbara Lynch's recipe for ricotta stuffed tomaotes with olive vinagrette?
I have a ton of Campari tomatoes and thought I saved the recipe, but I must have hit dump instead. Shame on me!

If you Google - Barbara Lynch Ricotta Stuffed Tomato Salad - there's a cooking demo to watch. Haven't found a written recipe.
Maybe you could wing it?

I had a copy from a friend out of a new book and just lost the darn thing. I did see that video or at least part of it and I just finished it and what to my surprise, that's it, but I assumed that it was a hot stuffed tomato recipe.
I made a good olive vinaigrette and did the stuffed tomatoes with ricotta dressed with herbs lemon zest, parm. etc. topped with bread crumbs and a little cheese, baked for 10 minutes or so (they were small campari tomatoes)served over baby greens with the vinaigrette and shaved parm curls. It was a nice change and went nicely with the orecchiette with veal sauce.
I'll make the stuffed tomatoes as shown in the video another night.
Thanks for reminding me to take another look at that video.
