I'm partial to the one from the oatmeal box:

Are you looking for crunchy or chewy?

Choc chips and oatmeal (post #71592, reply #5 of 6)

I just use the recipe from the box. They have perfected it. But I add chocolate chips.

Oatmeal Cookie recipe (post #71592, reply #6 of 6)

I agree the recipe from the box is best - but it has changed in the last couple of years.  I have the original recipe which is the best:

1 1/4 C butter

3/4 firmly packed brown sugar

1/2 granulated sugar

1 egg

1 teaspoon vanilla

1 1/2 all purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon

1/4 teaspoon nutmeg

3 cups of oats (quick or old fashioned)

Preheat oven to 375.

Beat butter and sugars until fluffy.  Beat in egg and vanilla.  Add combined flour, baking soda, salt and spices; mix well.  Stir in oats.  Drop by rounded tablespoons onto ungreased cookie sheet.  Bake 8-9 minutes
