Looking for a Coconut Cake Recipe (post #68961)

My Granddaughter and I recently have got into baking. I was thinking about trying an old fasioned coconut cake, but I can not find a recipe for the one I remembered having growing up. I remember that it always seemed to have several layers and had a real shinny white and light feeling frosting with coconut sprinkled on it. Does anyone remember this and have a recipe for the cake and icing? Any help and guidance will be appreciated.

If I had to guess I would guess it is this one--made with Duncan Hines white cake mix and Cool Whip. I would suggest making your own white cake (maybe a "hot milk" cake or even a "1,2,3,4 cake" and subbing whipped cream for the Cool Whip. I have had many a delicious coconut cake made (here in the South) by my DH's aunts and others in his little southern town. I DO think this is the one.

I have made 2 coconut cakes one by Martha Stewart and the other one by Barefoot Contessa. I liked the Barefoot Contessa's better but I think based on your description the one by Martha is similar to what you are looking for. I would be happy to type the recipe for you if you can't find it on her website.
