How are you defining (post #69351, reply #1 of 6)

How are you defining shredded? You can coat and fry chicken tenders and cut them in strips so that they may have some coating. I would not call that "shreds" and have never seen "shredded chicken" with a crisp crust. What kind of cuisine?

I'm thinking that your using the word 'shred' but mean small strips?  Have you had pulled pork?  This is shreds, the meat is cut apart using forks, you can do the same with chicken.

It would be really hard to coat the shreds and then deep fry, they would fall apart.  You would be able, however, to cut chicken (raw) into strips, coat them and then deep fry.

If you are sure it is cooked chicken shreds that are then deep fried, they must bind them with egg or something- think meatball- coat them in egg then dip in the coating and then deep fry.

Like Gretchen said, perhaps you could contact where you ate this and they could tell you how they did it.

But, but, it's SUPPOSED to taste like that!

Croquetas (cuban) uses cooked (post #69351, reply #6 of 6)

Croquetas (cuban) uses cooked chicken breast which is sheredded by hand or with a couple of forks, seasoned with salt and pepper, mixed with grated Jack cheese (maybe 4 parts chicken to 1 cheese)  rolled into balls or "logs".

Dip the balls into lightly beaten egg and roll in crumbs (I use progresso herb bread crumbs) and then fried.

They work and taste great.  Chipotle Pepper chopped and mixed into Sour Cream is great for dipping them as appetizers.
