Golden Beets
I have 2 golden beets that I bought at the farmer's market. I could've sworn there was a recipe last year that I wanted to make but couldn't find the beets...now I have the beets and can't find the FC recipe. Anyone have any suggestions?

I got beets in my CSA box yesterday and made this salad:

I made the variant with blue cheese and walnuts-- it was really good! I suspect you're going to wish you had more beets!

No wonder I couldn't find the recipe in last year's issues it is from 2009. That is exactly the one I wanted. I much prefer goat chesse so that is perfect!
My friend and I split up a basket of 4. It should do me for a salad for myself.

well, I finally made the dish last week. I found the golden beets and made the salad. YUM! The ingredients are simple and the combination is marvellous! I'll definitely be making that again.
I ended up having to eat my lunch at my desk so this is a photo from my phone. After I plate it, take a picture to post, pack it in my lunch containers, I plate it again to eat :)

That looks great-- indeed an excellent beet recipe, I'm glad you enjoyed it!
I love your lunches for work-- they are much nicer than the leftover-whatever I usually pack.
