I'm trying to decide on a coconut cake for Easter, one choice is Robert Carter's Ultime coconut cake.Has anyone else tried this cake. and if your opinion. It's going to be expensive and time consuming. thanks, delmarva

What is the recipe and what makes it expensive?

Being in the South where coconut cakes are de rigeur, a delicious white cake, soaked and with coconut milk and frosted with whipped cream and flaked coconut is often the offering.

Here is a delicious looking and very coconutty one from epicurious. Well, as usual I can't paste the address. It is a Bon Appetit recipe. There are a jillion recipes. This one did have coconut cream IN the batter and then more in the frosting so it would be very nicely flavored.

ROBERT CARTER HAS THE PENINSULA GRILL INCHARLESTON,S CAROLINA.,WAS ON MARTHA STEWART'S SHOW  DEMO. HIS ULTIMATE COCONUT CAKE WHICH TAKES A COUPLE DAYS TO FINISH. IT HAS 2 .5 LBS OF BUTTER 6 EGGS,LOTS OF OTHER INGRED.2,10" PANS MAKE 6 LAYERS OF CAKE,FILLING& FROSTING AND LOTS OF COCONUT. ANYONE HEARD OF IT?   tHANKS, dELMARVA

I saw it. I think there are others like it. It is undoubtedly a fabulous cake. Can't say much more about it. Do it if you want.

Thanks for the info. and encouragement Pie & gretchen. I'm definately going to give this cake a try. I've had the recipe in my stash for awhile . Went hunting for that 10" cake pan stuck away in my seldom used stash, its a big one.LOL

Hi delmarva!

I googled up the recipe from Martha:

and it looks wonderful.  It looks like it will work, so the answer probably depends on you.  If you are an experienced baker looking for a Project that will really impress, then go ahead.  However, if you are just looking for a nice dessert that will not take over your life, then I agree with Gretchen that there are lots of other recipes out there.  Isn't Ina Garten's recipe quite well-thought of:
