Citrus & Herb Marinated Chicken Tacos
Citrus & Herb Marinated Chicken Tacos (post #70601)

I'm looking for the chicken taco recipe from Fine Cooking labeled "Fresh 2009, No. 27." I've made it several times and have shared this recipe with friends and family but when I went to make it recently, I found the page torn out of the magazine. Obviously I shared it and didn't get it back. I have located the taco recipe online, but the things that accompany the recipe aren't online. There was a fresh tomato salsa, guacamole and marinated cabbage. I could probably fudge the salsa and guac but I'd love the cabbage recipe. Anyone?

I am looking at the recipe (post #70601, reply #1 of 1)
I am looking at the recipe now and all it says for the cabbage is: shredded red cabbage (optional). There is no recipe or method for it. Same thing for the guacamole. Here is the salsa recipe:
4 cups seeded and diced tomatoes
1 cup small-diced white onion
1/4 cup lime juice, more to taste
2-3 serrano chiles, seeded and finely chopped
1/4 cup fresh cilantro, more to taste
salt
combine tomatoes, onion, lime juice, serranos, cilantro, and 2 tsp. salt in bowl and let sit at room temp. one hour. season to taste with more salt, lemon juice, or cilantro. Refrigerate for up to three days (strain before using if it becomes too juicy).
For what it's worth, I always toss my shredded cabbage with a couple tbsp. rice vinegar and let it sit for at least 15 minutes before using in tacos.
