I was hoping someone had this recipe for Chichen Enchiladas, I have every other issue from 2001 just not this issue.

If anyone else has a great recipe for Enchiladas I would love to see it.

I would also like to know if I can make these ahead of time and freeze them.

Those enchiladas sound great--although I must fess up to using canned enchilada sauce most of the time. I always have leftover corn tortillas from taco night, so this is a good suggestion.

It was yummy- the reviews are a bit mixed, but I vote with the 4-5 star ones-- reminds me, I should go back and review that one!

The last time I made chicken enchiladas (red sauce) I followed a Rick Bayless recipe and another time a Saveur recipe.  Green enchiladas from a 1965 Mexican cookbook/Elisabeth Lambert Ortiz are the first enchiladas that I ever made and I still go to that recipe. 

You can't go wrong with a Rick Bayless recipe.
