Hi STJ4! We get celery root in our vegetable box sometimes but I never know what to do with it. One possibility is you could build your own soup recipe:

This is based on a cooking-without-recipes article in Issue 97. I made a lot of vegetable soups from this formula, as part of the "Cook the Issue" contest. The formula works well-- then you can make your soup as interesting as you like!
I don't like the taste of cooked celery root, so I usually make slaw with a simple mayo-yogurt dressing. That's not so appealing for winter though.

I did make up my own recipe and it was great! I have a little tweaking but all in all it was a good recipe, onion, garlic, potatoes, celery root and some spices. Would have loved to add heavy cream but I was being calorie conscience :-( Celery root is an intense flavor so if you don't love it this is def. not for you!!
Nothing better the making soup in the winter in freezing cold weather!!
