Am looking for a carrot cake recipe with whole weat flour .......and can i use coconut oil instead of veg. oil....and more raisin instead of sugar....

You can sub up to maybe half WW flour for white in a recipe. Why do you want to use coconut oil--veg is more healthy at least I think so. you can't sub raisins for sugar.

Why don't you google for a recipe for a "carrot cake whole wheat flour SPlenda"  and see what it looks like.

WHAT do you want--a "healthy" carrot cake\?   Why not just eat a SMALL piece of something that tastes really good

instead of bastardizing a recipe into something you think is healthier.  Just my opinion, which you may gather is a bit biassed. And
believe  it or not, from someone who does not eat desserts, but when I do, really appreciate truly GOOD ingredients.
