Hi there, I am new to this site and I used to watch Caprial Pence many years ago. She made this one recipe with mushrooms, red wine, beef broth and pasta. I cannot find it anywhere, can anyone help me? I think it was in one of her first cook books. Cooking with Caprial. It would greatly appreciated.

I can't be of much help. I did find a site that you can search for their recipes, give that a go and I'll see if I can find anything else.

Fettucine w/ Wild Mushrooms, From Caprial's Cafe Favorites, 1994, p. 94
1 lb fresh fettucine
1 T olive oil
2 shallots, chopped
1 onion, julienned
1 lb assorted wild mushrooms (shiitake, chanterelles, morels) sliced
1 cup dry red wine
1/2 cup vegetable stock
2 T butter
1 Tfresh ground pepper
1 T chopped fresh savory or 1/2 T dried
salt to taste
Cook fettucine. Saute shallots, garlic and onion in olive oil 2-3 mins. Add mushrooms, saute 4 mins until tender.Add wine, reduce by half, 4 mins. Add stock and boil for 3-4 mins more, until 3/4 liquid remains. Add butter, pepper, savory and salt to taste and mix well. Add Fettucine and toss well.
