Apricot pie recipe
Hello all! My widowed FIL is engaged to a lovely woman. She is not much of a cook, but remembers an apricot pie that her mother used to make. The pie used apricot puree, not apricot halves and might have been thickened with gelatin. Unfortunately, she and her siblings were banned from the kitchen, so she never learned the recipe.
Googling around, I find most apricot pies are made with halves, as a regular fruit pie. I also found an apricot cream, with gelatin-thickened apricot puree, which might be it. Does anyone have any help to offer me? I would like to make her a treat to welcome her to the family.

Ha, thanks Adele! I will try a few things and see if I come close. I'm tired of making the same pies and looking for a challenge.

Hey, I found the recipe (or something close) in Ken Haedrich's book "Pie". I will make this one and report back-- I just need to find some apricots. He makes it with pluots, I say close enough. We will see what my MIL-to-be says!
