freezing macaroni and cheese

saninc's picture

I would like to assemble the classic baked macaroni and cheese recipe and freeze it.  Ten day later, Thanksgiving, I would like to bake it.  Is this a good idea?  Are there some things I should avoid?  Can anyone help me?

Dear Saninc,

Is this recipe a flour-thickened cheese sauce? It should be okay-- perhaps let it defrost in the 'fridge overnight before baking. Also, maybe add a littlle more liquid, as the pasta will soak up a bit more.

Getting your Thanksgiving plans ready? What else are you making? The mac and cheese will make a great side dish!

Cheers, Jen
