OK, so on a whim I bought a little box of frozen chili-lime chicken burgers at Trader Joes the other day. I got home from rehearsal about 45 minutes ago, and thought it might make a quick dinner.
Threw it in my preheated LC grill pan with a few onion slices for about 5 minutes each side. Then toasted a whole wheat tortilla, chopped the cooked burger, and tucked it into the tortilla with the onions, some lettuce, reduced-fat cheddar, sour cream and salsa.
Absolutely fantastic! Really, it's SO good. And the burger only has 110 calories and 3 grams of fat. And no scary ingredients, all pronouncable & recognizable stuff. And freezer to plate in about 15 minutes.
I foresee a lot of these in my future. :-)

That sounds like something to have on hand. I am assuming you cooked it from the frozen state?

I did... the box recommends thawing but I have no time for that, LOL. And it cooked up just fine from frozen... I do put a lid on the pan while cooking it, though.

You ladies simply do not know how lucky you are! A TJ fairly nearby mine is about 50 miles one way, whole Foods ditto, only near by things are small grocery stores and a (whoopee!) Walmart. really wish I had something fairly close where I could just run out ang det what I needed right then and there!

Ah, 50 miles is nothing. It's 113 miles to our nearest trader joes and a border :)
