I made these yesterday. I ran the zucchini and onion through the FP with the large grating disk, which made the whole thing go together quickly. I love that they are low fat (I used 96% lean beef and reduced fat feta), high in vegetable matter (which also adds moisture), and I really like the texture of the bulgar. My husband came back for seconds, declaring them a keeper.

I thought they could use a little more flavor---more salt, and maybe more herbs and chunks of feta mixed into the filling. Anyway, I wanted to share, because I think it's a good springboard recipe to variation with other flavors, and I'd love to hear ideas from others about different combinations of herbs and spices, cheeses or nut add-ins and vegetables for stuffing.
