Please fill in your profile or otherwise give us some details. What country are you in? We have people on this forum from the US, Canada, Italy, Ireland, UK, Germany, The Netherlands, Australia, Israel, etc. What is your skill level now and where are you trying to get to?

The people who gave us golf and called it a game are the same people who gave us bag pipes and called it music and haggis and called it food.

I live in the Caribbean. I am not a professional cook, but I am a good cook and love to bake. I give big dinner parties and make food and cakes for orders. I want to give cooking classes but need some extra encouragement and I think a workshop will do the trick.

Welcome. Would flying to the US say, North Carolina, Florida, or New Orleans, be an option?

Gretchen lives in Charlotte and has attended a number of classes at Johnson & Wales, but I don't know if they have any programs which would be intermediate between a 4-year culinary degree and a few hours of classwork.  Perhaps she will come along and give you some more information.  I know there are a number of culinary schools in North Carolina.  The woman who now teaches my cooking classes used to be an executive chef, and I think she was trained at Wake Tech, but I don't know if they have any midrange programs, either.  You might google for culinary schools and see if any meet your needs.

To my knowledge, Charlotte doesn't have a "3 week " course.

 Denver with Cook Street might

I would google for  "two week cooking course" and fill in the geography.
