Team Canada's Menu for Culinary Olympics

Yesterday's Vancouver Sun had an article on Culinary Team Canada and its menu for the 2008 World Culinary Olympics.  A few posted recipes got me curious, so decided to take a look at their menu.  The Sun's article is here for anyone interested:

I was surprised at the amount of agar agar and gelatin used throughout their menu.  I'd love to try the Balsamic Pearls--they sound so cool!  I thought of Ashley when I was reading about them--could imagine him trying them out at one of his special dinners!  And Peter, there are some Trout Skin Chips, but I'm not sure what you could sub the bacon with!  :)
