Thank you for the credit but all I did is pass on a recipe from a wonderful little restaurant in Puerta Vallarta. They were kind enough to email it to me! Your wonderful fresh caught shrimp and ability made it the dinner it was,

It was so good and I had planned on more for lunch, but DH beat me to it so I have to settle for a few potstickers and a V-8, but as I told suz, I need an excuse to finish off the pineapple and I still have about 35 more pounds of shrimp in the freezer.

Have you ever grilled pineapple? It's really good. You can even sprinkle brown sugar on it after grilling and put a scoop of ice cream in the middle.
But, but, it's SUPPOSED to taste like that!

I have, but not with the ice cream and sugar.
Another use for the pineapple JFYI, last summer I made Roy's Hawaiian martini when the kids were out and they were a big hit. Took three days to ferment, but oh so good. I don't drink real martinis, but that version was delicious.
