stuffed chicken in a convection oven?

I'm stuffing a fat roasting chicken for my birthday dinner.  Should I use convection?  I'm short of time, so it seems like the thing to do.  What do you think?  The bird is about an 8 pounder.

PS I should say that my oven is not a "true" convection, just the single-fan variety.

I really don't find any difference with my "untrue" convection oven so I think it will all be method- bird that's lost its chill, high heat sear and low heat roast. You could eliminate a huge amount of time by simply spatchcocking the bird, putting the stuffing underneath.

"Spatchcocking" is short for "dispatching the cock," according to Tony Rosenfeld. A less graphic term is "butterflying." It really is a great way to roast or grill a chicken. I just learned that term this summer.

Are y'all familiar with freerice.com?  It's a game, but it's real.  The website is a vocabulary quiz.  For every word you get right, they donate 20 gains of rice to World Hunger Relief.  There are banner ads that pay for it all, but it's incredibly addictive to play.  The guy who started it just designed it as a game to bring up his kid's SAT score.  Anyway, I think that "spatchcocking" is a fine candidate for Freerice.

It's been lovely.  The chicken was yummy, stuffing was terrific (if I do say so myself) and I improvised a lemon buttermilk cake.  A neighbor had given me a bottle of prosecco, so we drank that.


Kids are now wrestling in the next room, laughing hysterically and trying to kill one another.  A normal evening in our household.


44 years old.  So far, so good.

When I was about 13, my Mom was looking at her teeth in the mirror and I said to her "Did you forget how old you are?"
