I grow my own raspberries and have nearly enough for two batches of jam, but absolutely no time to make it before I leave for nearly two weeks on a trip. I have the berries smashed and in a container, and wonder: would they keep in the refrigerator for two weeks, or should I freeze them? I'd prefer to not freeze if I can get away with it: easier to make the jam without defrosting a brick of berries.

You'll have to freeze them They will not be good after that length of time. Are you making preserves with seeds or jelly.

I agree with Gretchen-- the berries will ferment in the refrigerator. Have you smashed them already? They would defrost quicker if you spread the berries on a cookie sheet and froze them individually. Good luck-- I envy your berry crop!

Thawing time is so insignificant anyway, especially if you are making jam where it will be heated. Hardly a problem. And frozen the jam could even be made fresth in the winter when it is much cooler in the kitchen.
