Snack Ideas
Well, I am feeling like I am running out of snack ideas. Every day at around 3:30pm or so I need to have a small snack but I am running out of new and exciting choices so I thought I would reach out and see if there is anything you would/could suggest to get my out of my rut. I am looking for something that is approx 100-150calories.
Here are some of the things that are staples and need shaken up:
-apple with PB
- oatmeal
- tomatoe/feta salad (sometimes cucumber too)
- cup of soup (typically in the winter more so than now
- rice crackers and dip
- toast with PB
- Baby Bell cheese with veggies
Any ideas?

Snack ideas (post #71371, reply #1 of 10)
I stopped at a vegetable stand yesterday and there are several melon and berry choices, still some peaches and now plums. I cut up a whole seedless melon and will add another melon and berries for a fruit salad.
Pistachios, hummus and veggies, pico de gallo and chips? I have a ton of peppers so I have been making pepper and olive salad good alone or two ounces of whole grain artisan baguette is 130 calories (the bread). Olives are about 15-20 calories for three large, but in the pepper salad they are cut into small pieces. That is what I've been snacking on lately.
Nice! (post #71371, reply #2 of 10)
that sounds so yummy, thanks for the ideas. We haven't seen peaches yet and just saw the first harvest of Ontario strawberries 2 weeks ago. As for the melon I think the watermelon is starting to come out now. We are further to the north so sometimes I can't try some of the recipes until much later in order to use local produce.
Hummus and veggies sounds like a good option. There are very few foods I do not like but olives are one of them, no matter how hard I have tried I just cannot get used to the taste and I have tried several varieties. :( but hey, that saves me on the calories! YAY! :)

Hey kitchengoddess!
Great topic, I need snack ideas too! WIthout that afternoon snack, I am totally grumpy by the time dinner rolls around!
How about homemade granola, with or without yogurt? ICD mentioned pistachios-- I like a handful of almonds too.

True! (post #71371, reply #4 of 10)
See, I just need to be reminded. I have a great recipe. I love the one from FC from a few years ago. Do you have one that makes a clumpy granola, DH would really like that and I can't get the one I have to be more clumpy.
clumpy granola (post #71371, reply #5 of 10)
Hey kg--
No, my granola is not clumpy at all-- I would like that too. How is it done? I use the "Almond coconut granola" recipe from epicurious, but I use whatever ingredients I have on hand and way more oats than it calls for. One granola tip-- the Saveur 100 had an entry for granola and their recipe used puffed rice. Now I add a few handfuls of Rice Krispies to my granola-- it really lightens up the texture.
Another thing I do for snacks is to bake muffins, then package them in pairs in sandwich bags in the freezer, then defrost as needed. A frozen muffin packed with my lunch can sometimes subsitute for an ice pack-- and much tastier too.
Have you had edamame? Even my kid likes that-- and it's fun to eat.

oatmeal shake (post #71371, reply #6 of 10)
kitchengoddess--
Have you had an oatmeal (Avena) shake? There is a Costa Rican restaurant here in Chicago that is well-known for them. Here is a thread from our local food chat about replicating this shake:

I've had this shake and it is really good-- similar to horchata with more texture from the blended oats. Perfect for hot weather.

Will do (post #71371, reply #7 of 10)
I haven't read the whole thread but I do love horchata!!! one of my favourite drinks as a child. I will give this a try.
heading to the cottage next week and won't be back for 2 weeks, YAY! I'll report on any new recipes I tried and will post photos too.

I did! (post #71371, reply #9 of 10)
Sadly I forgot all about photographing my food! I guess I was in relaxing mode. I did make some lovely chicken in a coconut sauce http://www.eatingwell.com/recipes/saucy_coconut_chicken_stir_fry.html which was very yummy and rack of lamb for our anniversary.
And now trying to get back to reality is tough :(
