I am looking for a low salt, nitrate recipe for salami and sources for cure in canada.

I'll be interested to see what responses you get, because I didn't think you could have a low salt salami--at least not a cured one--since salt is such an integral part of the curing process process.

I checked your profile and it's empty so don't know where you're located but I'd email Oyama Sausage Co or Hills Foods, both in the lower mainland of Vancouver.
