How does one keep red onions from changing color, raw or after cooking?

Hi, athome, and welcome to CT.  I don't think there's much problem with red onions changing color when raw, but honestly don't know how one keeps them red if you cook them.  I'm sure brighter and wiser people than I can help you out here.

Try adding an acid (e.g. lemon juice, vinegar).

I make the Zuni Cafe pickled red onions (great recipe).  The heat and cool method really works for this recipe and maybe a watered down version of the vinegar, then use the cooling method. 

I dunno...let us know what works for you.
