Recipe: Thai Shrimp & Grapefruit Salad (post #34064)

Made this last night for dinner, thanks to Jillsifer's grapefruit thread. Really good, though I plan to keep tinkering with the dressing based on the dish I had at a restaurant a while ago. I think adding a bit of chile/garlic paste may do the trick.
Anyway, it's a light and refreshing main dish salad, or could easily serve 4 as an app.

Very pretty. I could see it with baby spinach too.

Yeah, I have a spinach and grapefruit salad which is really great. Though Tracy's salad looks lovely!
