I just made the Roasted Rosemary Butternut Squash & Shallots recipe tonight.  It is excellent.  My husband says this will be part of our holiday menu this year.  The only suggestion I have is not to cut the squash too small. Butternut squash can contain a lot of water & it can shrink quite a bit when roasted.  Also do use fresh rosemary - and don't omit the shallots -The combination is wonderful!
