recipe for all-american pancakes?

I am traveling to France shortly, and have been asked to bring "real" maple syrup. I assume I will also be asked to whip up a batch of pancakes to go with.
I need a fool-proof, simple recipe to bring along, preferably one that can be easily converted to metric.
Please help! I may be asked to perform this culinary feat for the future in-laws...

abigail, try this, it's the recipe for IHOP's buttermik pancakes and should make you some easy to do passable light pancakes...smitty Nonstick Spray
1 1/4 cups all-purpose flour
1 egg
1 1/4 cups buttermilk
1/4 cup granulated sugar
1 heaping teaspoon baking powder
1 teaspoon baking soda
1/4 cup cooking oil
pinch of salt

1. Preheat a skillet over medium heat. Use a pan with a nonstick surface or apply a little nonstick spray.
2. In a blender or with a mixer, combine all of the remaining ingredients until smooth.
3. Pour the batter by spoonfuls into the hot pan, forming 5-inch circles.
4. When the edges appear to harden, flip the pancakes. They should be golden brown.
5. Cook pancakes on the other side for same amount of time, until golden brown. )
Makes 8 to 10 pancakes.

Be sure to take maple syrup produced in Canada. I understand that producers in the U. S. are allowed to inject formaldehyde into the maple trees to increase the amount of sap obtained. Canada outlaws this practice, hence, Canadian maple syrup is the most pure.

I couldn't believe the tree injecting bit so I asked someone who worked with syrup makers and he said that he'd heard of people putting a formaldehyde tablet in back of the spile or tap that punctures the tree. It acted like an antibiotic, he said, and kept the sap flowing longer where without it bacteria grow and clog up the wound and the sap is stopped. I had no idea it was all so violent. Is the formaldehyde transfered into the syrup? Is it evaporated during the processing? What does injesting formaldehyde do (nothing particularly healthful, I'll bet)?
