I tried out a recipe for Thanksgiving and was really happy with the results. The stuffing recipe is for a 3 lb pumpkin for sure or at least two small 1-1/2 pounders.
Doesn't appear that I am SPAM today.

Hi ICD, so glad you tried it and liked it. Are there many variations of the same recipe? A friend of mine turned me onto one of the recipes and she said she had wanted to try it. How many people would it feed you think? I would like to make some food for a friend who just lost his mother but there are 5 children and 2 adults to feed, would this be enough?

The little one that I made is enough for 3 as a side. DH ate 1/2 and I had about a quarter piece. The 3 lb one might work for you, but I would try it out for yourself and determine the serving sizes that would feed. Three small ones would probably do the job. There is some discussion at CTC on variations and I think that quinoa and rice was mention and maybe ham if I'm not mistaken. Look around for bakes stuffed pumpkin and by all means ask Gretchen about a bread pudding baked in a pumpkin.

T-giving here this year and I wanted to try the recipe before making it for several guests. Nice recipe, now on to the sweet potatoes.
I made a fantastic Shepherd's Pie with sweets this past week, DH still doesn't realize that here was lamb in it and I have a second one in the freezer, he bragged about it and invited guest over to finish that one. I'll send the recipe once I clean it up as the chef made several errors, including way to much salt.

One thing I may have figured out about the spam filter is that you may not be able to use the "enter" key on your keyboard, but may have to actually punch their "post" button. At least it seems that way to me sometimes.
Have already told you how cute that is.

Thanks Gretchen I'll check that next time, but the last time it was when I hit post, didn't even get to verify, just got fed up.
DH raved about that pumpkin at dinner with friends last night and I have to send her the recipe. I am dying to try the pumpkin bread baked in a pumpkin and the addition of caramel sauce puts it over the top for sure. I'll do that for homework today.
