no duck neck

My second ever 5 hour duck is in the oven. I was sooo disappointed that there was no neck in the bag. Since I was not making stock, nibbling on the neck which had been tossed in the pan under the rack was a guilty pleasure I had with the first duck that I won't get this time.

Also, I used a hunk of ginger I had frozen. The "flesh" looked a little discolored - greenish. Is that the result of being frozen?
