Need 3rd soup

Was given a three crock cooker for Christmas and need a 3rd soup for Sunday Pot Luck at church. Am looking for a good sauerkraut recipe. ( Because I have some) 1st is Split pea, second is minnestrone. Any ideas?

Mushroom soup. You can use fresh or dried or a combo depending on what you have at hand. Add milk and whiz it us for cream of mushroom.

But, but, it's SUPPOSED to taste like that!

One of my favorite soups is roasted butternut squash and green apple.

Half and de-seed two large butternut squash
Peel and dice 4 large granny smith apples.
Brush melted butter onto squash halves.
Fill the seed cavity with the diced apples.
Cover with tin foil and roast until squash is soft.
Scoop the flesh from the skin with apples and puree.
Adjust consistency with vegetable stock.
Season with cinnamon, allspice, nutmeg.

Caribbean Pumpkin And Black Bean Soup

Amount Measure Ingredient -- Preparation Method

1 teaspoon Ground Cumin
1 15 Oz can Pumpkin Puree
1 15 Oz can Black Beans -- Drained
1 14 Oz can Coconut Milk -- unsweetened
1 cup Chicken Or Vegetable Stock
4 Tb Cilantro -- chopped
2 teaspoons Lime Juice -- freshly squeezed
3/4 teaspoon Lime Zest -- freshly grated

Stir cumin in heavy mediuym saucepan over medium heat for 30 seconds. Add pumpkin, beans, coconut milk, broth and 3 tablespoons of the chopped cilantro. Bring soup to a boil, stirring constantly. Reduce heat to medium-low and simmer 3 minutes to blend flavors. Mix in lime juice and lime zest, season with salt and pepper and serve.

Garhish with remaining cilantro.

Chipotle Sweet Potato Soup

2 pounds sweet potatoes (about two large or three skinny ones) -- or 6 cups cooked sweet potatoes
2 each carrots -- peeled and diced
2 stalks celery -- diced
1 medium onion -- diced
4 cloves garlic -- minced
4 cups chicken or vegetable broth
2 tablespoons chipotles in adobo (depending on your heat tolerance) chopped -- (2 to 4)
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
Juice of one lime
1 tablespoon olive oil
Salt and black pepper to taste
Sour cream

Heat the olive oil on medium low in a large soup pot, and cook the onions, celery and carrot for 10 minutes, stirring occasionally. Add the garlic and cook for one more minute.

Add the sweet potatoes, broth, chipotles, ginger, cinnamon, cloves and nutmeg to the pot. Bring to a boil and then simmer, covered, for 20 minutes or until sweet potatoes are tender.

Let the soup cool, and then in batches, puree it in the blender. If you prefer, you can use an immersion blender in the pot instead.

Once the soup has been pureed, stir in the lime juice and add salt and black pepper to taste.

Serve topped with a dollop of sour cream and some of the chopped cinnamon-chipotle pecans.

My favorite is not sauerkraut, Italian Sausage, cabbage with sun dried tomatoes. I will post if you are interested. Have gotten rave reviews over the years with this.
