Moroccan Rub for Chops

A few weeks ago we were guests at a friend's house for dinner and she served the most delicious lamb chops I had ever eaten.  Tonight, I decided to try the rub on pork chops and was very pleased with the result. I'm not sure where she got the recipe, but is sure is a wonderful dry rub.


1 Tbs. extra-virgin olive oil


1 Tbs. ground cumin


2 tsp. ground turmeric


1 tsp. each, sweet paprika, coriander seeds and garlic salt


1/2 tsp. hot red pepper flakes


Preheat grill pan to high.  Brush chops with a little olive oil.  Combine rub ingredients.  Rub spice blend into the chops on both sides.  Grill chops 4 minutes on each side for medium rare.  I added a little extra time for the pork.  Served with some asparagus sauteed with garlic...yummy!!!
