Right down the street from me is an awesome restaurant called "Curly's" they specialize in carribean and jerk cooking. For jerk chicken, they sell their marinade, which I use and it's terrific. You can get it in most supermarkets in Buffalo, but here is an address if you care to mail order, or ask them for recipes:

IMHO, thyme is key when "jerking." I always add a ton of dried thyme to a dry rub, particularly for grilling. You cannot put too much on as far as I'm concerned. Good eating!
