Orzo,risotto and couscous comes to mind. The cookbook Mediterranean Fresh has great one dish sides, but I'm not at home to post anything from the book.

I'm sure I'm too late, but MoRoccan artichoke and orange salad from Med Fresh would be a good recipe. Unfortunately eat your books is only source I can find at the moment.

That is a great purchase and I found it to be a real treasure throughout the year and so many adaptable recipes for salads and dressings. As it turns out I was at my daughter's house and found her copy on a shelf (1 of six or seven cookbooks that she owns, that's okay she stands to inherit hundreds of cookbooks).
I hope you enjoy the book...
