I hope everybody has had to hear that awful song for chicken "dump-on". Anyways, I have a really wonderful recipe that my husband and I eat as often as we can during the spring season. I don't rmember where I got the recipe, but it has been changed a little. Here goes:


2 whole chicken breasts,(skinless) grilled, julienne

5 carrots, peeled, julienne(ish)

1 lb asparagus, woody bottoms broken off

Hot, cooked, drained linguine (enough for about 4 people)


1 lg onion thinly sliced

1c. water

1/4c each soy sauce and rice vinegar

1Tbsp each garlic and ginger

1Tbsp each sesame oil and lemon juice

1 1/2 tsp. sugar

3/4 tsp tabasco (more if you like the heat)

Spread onion on baking pan. Roast in 400 oven til edges are bowned lightly. 15 min. Remove from pan. Turn up heat to 425. Throw carrots and asparagus ont the pan you cooked your onions on. Drizzle w/ oil, sea salt, and roast til just done. Meanwhile put your onion and remaining "sauce" ing. into blender. Puree. Transfer to a saucepan and bring to a gentle simmer. Make a slurry using 1/4 c water and 2 Tbsp cornstarch. Thicken sauce. Cook cornstarch taste out.

So now you have hot pasta, hot cooked asparagus and carrots, and hot chicken breast slices. Toss this tog. w/ the sauce, garnish w/ lemon and pass the fresh ground pepper.

Voila! This is one of our very favrite meals. Bon Appetit.

If someone has a Chicken casserole that they would like to share with me, I have been asked to prepared a casserole for 28 people. The client will be heating it up herself so I need something that she will not dry our (that is , it should have some sort of a sauce that will not separate on reheating) She will serve it with rice, veg etc. I am just no a casserole type of cook and, of course, I have lots of recipes but they are not used. Economical should be taken into consideration for this particular client as well.
