Health Dept. Friendly cold salad reci...

My salad bar units, although cold enough do not support the food at 40 once they have been displayed minutes. With our new health dept. requirements, I am about burnt out on new ideas that have no protein or use no dairy or use cut fruit etc. etc. A suggestion to keep the open top salad units foods cooler would be helpful as well. Lids won't do, too high volume. Ice underneath doesn't keep center of foods cold enough either. Almost freezing prior to service only hold for about 45 minutes, if that. Of course, you loose quality on frozen vegetable items, etc. etc.etc.......HELP!

Keep your volume down so that things turn over within the four hour period.
