Guinea Fowl recipe

One of the most wonderful dishes I've ever had was at a restaurant
in the Dordogne, and I wonder if any of you have a recipe that will help
approximate it. It was for a rolled guinea fowl, rolled with vegetables and
herbs and with a mustard glaze/sauce. I realize that doesn't give you much
to go on, but if you know of a recipe that's somewhat like that, I'd be
grateful for something that will tide me over 'til I can get back there! I
know a great butcher that has guinea fowl, now I just need to know what to
with it.
