Garlic infused oil

I received a bottle of home made garlic infused oil for a gift.  The bottle of olive oil has same garlic cloves and herbs inside the bottle which has been sealed with wax.  My question is about the safefty of the item.  I was taught that it is unsafe to store garlic in oil because it can breed botulism.  Should I toss the oil out?  I also received two herb flavored vinegars from the same source, but I'm quite sure these are safe.  Does anyone know about the oil?  Safe or not?

It really isn't "safe". You don't know when she made it. Unfortunately, it isn't good. You could heat it for 20 minutes to a simmer and use it. Vinegar is fine.

Thanks Gretchen.  That's what I thought.  But I didn't know I could heat to a simmer and use.  Maybe I will just display it as a decorative bottle and forget about it.

Madeleine, perhaps you should check with "the source" most delicately about how she uses and stores them.   The botulism it spreads is really nasty.  I literally saw a gift of rosemary, chiles and oil bubbling like a lava lamp on sitting on a friend's kitchen counter.  Don't want that happening.

Madeleine, we had a case in Vancouver where a guy nearly died from a restaurant incident.  I work with his wife.  I wouldn't chance it. He's still not right and it was years ago.  Chuck it!
